Cathartes is obviously very busy with a new release but most of the points you mentioned will take you less than half an hour to change with LSA workbook. I bet Mark can help you as AFAIK he has an experience in CC data tweaking.
Back to playing this great version in Win 7. Along the "upgrade" path to Win 7 MS has changed the registry structure for the C:/Programs/Microsoft/Microsoft Games location to........which I found.
Hence, while you can create a folder for the installing in that Games folder, there seems no way to _install the game_ to that folder so it appears in the registry to enable editing the screen res. to higher then 1024 x 768 as per this older thread:
